Or at least that’s the gig. The Fellow Aiden is an ambitious drip brewer designed for those who are all about cup quality and comprehensive control. With striking aesthetics and next-gen features, the Aiden aims to deliver pour-over precision with batch-brew convenience. And in many ways, it does—though not without some frustrating compromises.

Design & Build Quality

Fellow is known for sleek, minimalist design, and the Aiden doesn’t disappoint on that front. It’s visually stunning: a matte black “black box” brewer paired with a cylindrical steel thermal carafe, smoky frosted water tank, and a mix of sharp edges and soft curves that fit perfectly into the Fellow ecosystem. It’s also now available in white, offering a fresh, clean look that still feels modern and cohesive with the rest of Fellow’s lineup.

That said, the Aiden’s construction leans heavily on plastic. This was a deliberate choice to keep costs in check—a more premium build would have pushed the brewer out of its target price range. Fellow spent their money on features, not materials, prioritizing advanced brewing capability over a luxury feel. It’s a careful balance between performance and affordability, and while it may not feel as durable or substantial as some competitors, the technical prowess more than compensates for many users.

There’s talk that a higher-end Studio Edition with improved build quality could be released in the future if there’s enough demand, but as of now, no such version has been announced or confirmed.

Features & Functionality

Where the Aiden truly shines is under the hood—it’s one of the most technically advanced home brewers available. It offers multiple ways to brew, from instant and guided brews to fully customizable recipes. Whether you want a fast cup or a dialed-in extraction, the Aiden delivers.

Instant Brew Mode

In Instant Brew, just add your preferred amount of coffee and water—the machine takes care of the rest using default parameters designed for balanced extraction:

• Default temperature: 205°F / 96°C
• Default ratio: 1:16 (coffee to water)
• Default bloom ratio: 1:2
• Default bloom duration: 30 seconds
• Pulse brewing: Short water bursts help agitate the coffee bed for better extraction
  • Single serve: 3 pulses
  • Batch brew: 1 pulse
  • Time between pulses: 23 seconds

It’s a fast, reliable way to get a great cup—especially if you’re not in the mood to tweak every detail.

Guided Brew

The Guided Brew feature is like a built-in barista. It uses pre-set brewing profiles developed by Fellow and walks you through the process, including:

• Choosing the right filter basket
• How much coffee to add
• How much water to use

You simply press “brew” and let it run

It even supports single-serve brewing directly into your favorite mug, making it a friendly option for beginners or for those mornings when you want quality with zero guesswork.

Brew Profiles

For advanced users, brew profiles offer complete control. These are essentially custom recipes where you can set or tweak a wide range of brewing variables. You can either:

• Choose from Fellow’s curated profiles
• Download profiles from top roasters via the Fellow App
• Create and save your own

Fully customizable parameters include: Brew temperature, Coffee-to-water ratio, Bloom ratio, Bloom duration, Bloom temperature, Number of pulses, Time between pulses, Pulse temperature.

The Aiden automatically adapts any profile to the volume of coffee you want to brew, ensuring consistent extraction no matter the batch size.

Basket & Showerhead Compatibility

The Aiden includes two filter baskets:

• A #2 cone basket for single-serve brewing
• A flat-bottom 8–12 cup basket for batch brewing

A dual showerhead ensures even water distribution for both single-serve and batch brewing, using a one-dot, 3-stream pattern for cone brews and a three-dot, 12-stream pattern for larger batches—consistently delivering balanced, flavorful coffee every time.

Brew Quality

The Fellow Aiden makes exceptional coffee, often rivaling skilled manual pour-over. It offers precise temperature control, customizable brew settings, and a wide batch range from 1 to 10 cups (150ml per cup). Its accurate pulse patterns, consistent bloom, and even water distribution result in remarkably clear, well-extracted brews. Light roasts shine with floral brightness and a silky mouthfeel, while medium roasts benefit from the ability to program a temperature decline, drawing out chocolate and nutty notes without tipping into bitterness—something few automatic brewers can manage. 

While the Aiden doesn’t replicate a manual pour-over exactly, it comes impressively close. Its multi-stream shower head and hotter slurry mean it extracts slightly more than a hand pour, so using a coarser grind and a declining temperature profile is key to bringing results closer to pour-over style. With the right setup, the Aiden produces balanced, flavorful cups and consistently excellent extractions.

Carafe

The Aiden comes with a double-wall thermal carafe to keep your coffee warm without the need for a hot plate. It performs reasonably well in terms of heat retention, especially for larger brews around 850mL or more, where the volume helps maintain temperature for longer. For smaller serves, however, the carafe struggles to retain heat for extended periods.

One downside of the carafe is the lid design. Unlike brewers like the Moccamaster, which use a funnel lid to automatically mix the coffee as it brews, the Aiden’s lid lacks a built-in mixing mechanism. This can lead to a strength gradient, where the bottom of the carafe is noticeably stronger than the top. A gentle swirl or stir after brewing is usually enough to fix this, but its worth being aware of to ensure a consistent cup, especially for larger batches.

User Experience

Unfortunately, the user experience of the Aiden leaves much to be desired—especially when using the machine directly. The Aiden features a circular display paired with a single click wheel for all navigation. While this setup looks clean and minimal, it quickly becomes frustrating and impractical to use. The software isn’t optimized for the screen’s shape, making menus feel cramped and awkward to scroll through. It’s not uncommon to enter a menu and struggle to exit, and simple tasks can require far too many clicks.

The interface is passable for Instant Brew mode, where you’re relying on preset defaults, but it falls short for a machine that’s meant to celebrate customizability and control. For that reason, most users will find the Fellow app essential—not just as a bonus, but as the best way to fully use the brewer. The app allows you to set brew parameters, save profiles, upload them to the machine, and even schedule brews with far less friction.

Another small but frustrating design flaw is that the water level isn’t visible from the front, and the machine only alerts you after the tank is empty—potentially mid-brew—with no low-water warning beforehand.

Despite these drawbacks, the built-in presets and guided brews work well, and those who rely on the app can largely avoid the interface quirks. Still, for a product with such technical potential, the on-device experience is a missed opportunity that will hopefully be addressed in a future version.

Fellow Aiden App

As mentioned above, the Fellow Aiden app is an essential companion to the brewer—unlocking its full potential and smoothing out many of the usability issues found in the physical interface. While the machine itself is controlled by a single click wheel and a circular screen (which can feel restrictive and clunky), the app offers a far more intuitive and user-friendly experience.

With the app, you can:

• Connect to your Aiden over Wi-Fi
• Schedule brews for specific times—whether it’s a one-off or recurring throughout the week
• Adjust all brewing variables remotely, including temperature, bloom settings, pulse details, and ratios
• Create, save, and manage brew profiles with ease
• Download recipes from top specialty roasters and apply them directly to your machine
• Update firmware, allowing for new features and ongoing improvements

Perhaps the app’s most valuable feature is how easily it allows users to build and customize brew profiles—tweaking everything from pulse timing to bloom temperature, then saving and syncing those recipes with the brewer. This makes it ideal for users who want complete control but don’t want to scroll through endless menus on a tiny circular display.

While still in development and not without a few quirks (such as occasional syncing issues), the app is a major step forward in making complex brewing accessible, repeatable, and shareable.

Cleaning & Maintenance

Maintenance on the Aiden is fairly simple: a quick wipe-down, a removable showerhead for cleaning, and cleverly placed vents under the brew chamber to promote evaporation. Some users have noted a condensation issue, where moisture can become trapped inside the machine if the lid is closed after brewing—potentially leading to a musty smell over time.

Comparison to Competitors

• Moccamaster: Classic, durable, and easy—but it can’t match Aiden’s brew quality, temperature precision, or customization. The Moccamaster is more reliable long-term and excels in simplicity, but it struggles with small batch consistency and even extraction. The Fellow Aiden is a bold step forward in automated brewing. It offers unmatched precision, outstanding coffee quality, and versatility from cold brew to small-batch pour-over analogues. But it’s also a machine of contradictions: technically brilliant yet ergonomically frustrating, beautifully designed yet cheaply built. For coffee geeks who can navigate its quirks, it’s a joy to experiment with. For everyone else, it might be worth holding out for a potential Aiden v2—an expected update that, with some thoughtful refinements, could elevate this already impressive brewer into something truly exceptional.
